Mom’s Apple Cake

My mother likes to bake and she makes cakes that are easy and not too fussy.

1/2 cup butter or margarine
2 cup white sugar
2 eggs
1 tsp. vanilla
2 cups unsifted flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
4 cup diced raw apples (peeled or unpeeled)
1 cup chopped nuts
1 cup raisins (optional)

Cream butter and sugar together until blended.  Add eggs one at a time.  Add vanilla and mix.  Combine flour , soda, salt, cinnamon and nutmeg and add to wet ingredients slowly and mix until combined.  Add apples, walnuts, and raisins and mix.

Pour this mixture into a buttered 13 x 9 pan.

Bake at 325 degrees for approximately 50-60 minutes or until toothpick comes out clean.
Sprinkle sugar over hot cake and/or serve with whipped cream.
