We were visiting Healdsburg and tasted this savory appetizer made by a Bellweather Farms representative. It is not sweet and can be served with wine.
8 oz. Fresh Farmer’s Cheese (Fromage Blanc can be substituted)
1 jar fig apricot chutney (or your favorite fig chutney) – you will not use the entire jar.
Line a large custard dish (8 oz.) with plastic wrap.
Place a ~¼ inch layer of the cheese on the plastic wrap. Add a ¼ inch layer of the fig chutney. Continue to alternate layers until the custard cup is full. Place a layer of plastic wrap on top of this “torta”.
Refrigerate for l hour or longer. Take plastic wrap off the top of the custard cup. Invert “torta” onto plate and remove the bottom layer of plastic wrap.
Serve with crackers or slices of baguette.
