Ham and Orzo Salad
This recipe is one of our favorites to make with leftover ham (or good quality ham purchased from the deli).
2 cups diced ham
½ cup chopped green onions
1 cup thinly sliced fennel (or celery)
¼ cup finely chopped parsley
1 cup mayonnaise
1/8 teaspoon Tabasco sauce
1 teaspoon freshly ground pepper
1 ½ cups dried orzo
Combine the ham, green onions, fennel, parsley, mayonnaise, Tabasco, and pepper in a large bowl. Mix well.
Cook the orzo in boiling, salted water until tender. Drain. Add to the ham mixture and toss to combine.
Cover and refrigerate for at least 2 hours or overnight.
Serves 4 to 6
