Lemon Icing

¼ cup soft shortening or butter
2 teaspoons grated lemon rind
1 egg, well beaten
1/8 t. salt
16 oz. confectioner’s sugar, shifted
2 Tablespoons lemon juice
2/3 cup milk 

In a mixer bowl, beat the butter, lemon rind, and egg until well combined.  Add salt and confectioner’s sugar and combine.  Add lemon juice and milk and mix until well blended.

 Ice the Graham Cake (in blog) or other suitable cake as desired.
