Chevré Cheese Log

This appetizer is wonderful for festive occasions or just a simple BBQ on your deck or patio.

3 Tablespoons finely chopped green onion
3 Tablespoons finely chopped fresh parsley
¼ teaspoons minced lemon peel
6 oz. chilled cream cheese
6 oz. goat cheese
Salt and freshly ground pepper
¾ cup shelled, lightly salted pistachios, finely chopped

Mix green onion, parsley and lemon peel in a small bowl.  Place cream cheese on center of 8 x 14 inch sheet of plastic wrap.  Flatten into 4 x 6 inch rectangle.  Spread goat cheese over.  Cover with another ~8 x 14 inch sheet of plastic wrap.  Roll cheese into 6 x 10 inch rectangle.  Peel off top sheet of plastic wrap.  Sprinkle cheese with parsley mixture and then salt and add good amount of pepper.  Start at one long side, roll up tightly, jelly roll fashion using plastic wrap to help.  Roll log in the chopped nuts and cover completely.  Wrap in foil or plastic wrap and refrigerate until firm, approximately 2 hours.

Unwrap the cheese log.  Cut log crosswise in half and trim the ends.  Wrap each half tightly in plastic wrap.  Refrigerate until ready to serve.  This recipe can be prepared 3-5 days ahead.

 Serve with sliced baguette, crackers, apple or pear slices.
