Hasty Hots

We prepare these whenever we need a quick, simple appetizer for company. The original recipe is from Sunset Magazine.

 4 green onions, including some of white part, finely minced
½ cup grated Parmesan cheese
~5 or 6 Tablespoons mayonnaise (we prefer Best food which is Hellman’s on the East Coast)
12 – 18 slices of French baguette bread, sliced diagonally

Stir the onions, cheese and mayonnaise together until blended.  Add mayonnaise to make a firm spreading consistency.  Toast one side of the bread slices.  Spread the cheese mixture on the untoasted side and broil about 6 inches below the broiler until bubbly and lightly browned (~ 3 minutes).  Watch the broiling  appetizers diligently.
