Cabbage and Apple Sauté

This dish is healthy and easy to prepare.  Serve with pork chops, broiled pork steak, country ribs etc. or as a meal by itself.  The bacon can be omitted if desired.

3 slices bacon, diced (optional, add 1 tablespoon olive oil if omit bacon)
1 large yellow onion, peeled and sliced
1 head of cabbage, cored and sliced
2 cooking apples, cored and slided
½ teaspoon whole caraway seeds
½ cup dry white wine
Salt and freshly ground black pepper to taste

Sauté the bacon in a large pot such as a Dutch oven until the bacon is translucent.  Add the onions and sauté until they begin to brown.  Add the remaining ingredients and cook, covered.  Stir often until all is tender.

Serves 6 to 8

Original recipe idea is from The Frugal Gourmet Cooks American, Jeff Smith
